Cornbread Taco Bake

1 lb. lean ground beef
1 envelope taco seasoning
1 can chili without beans
1 pkg. shredded Colby Jack cheese
2 pkg. corn muffin mix
1 can corn, drained
1 chopped tomato
1 can sliced black olives
1 (16 oz) container sour cream.

Preheat oven to 375°.

Cook ground beef over medium heat, drain. Add taco-seasoning mix according to pkg. directions. Stir in chili and 1 cup cheese.

Prepare corn muffin mix according to pkg. directions. Stir in corn and remaining cup of cheese

Spoon ground beef mixture evenly onto bottom of pan. Top with cornbread mixture spreading to edges of pan.

Bake 15-20 min. or until golden brown. Cut into squares.

Top with chopped tomatoes, sliced olives and sour cream if desired.
