1 18oz package refrigerated sugar cookie dough
¼ cup light ricotta cheese
1 tsp sifted powdered sugar
1/8 tsp vanilla extract
2 canned peach slices in juice, drained and cut into very thin slices
1 small kiwi fruit, peeled and thinly sliced
2 tsp reduced sugar apricot spread, melted
Preheat oven to 350 degrees
Cut 2 (½” thick) slices from dough; reserve remaining dough for another use. Gently press each slice into a 4” circle on a baking sheet. Bake at 350 degrees for 10 minutes or until golden.
Cool on pan 1 minute; carefully remove from pan. Cool cookies completely on a wire rack
Combine cheese, powdered sugar, and vanilla extract in a bowl, and stir well. Spread cheese mixture evenly over each cookie, and top with sliced peaches and kiwi. Brush each pizza with melted apricot spread. Serve immediately.
