Hot Wings Wraps

Blue Cheese Sauce:
Stir together and fold in:
¼ cup mayonnaise
2 tbsp. milk
1 tsp. Worcestershire sauce
Juice of ½ a lemon
Salt and cayenne to taste
1/3 cup blue cheese, crumbled
1 tbsp. chopped fresh parsley

Condiments:
½ cup cucumber, halved length wise, seeded, thinly sliced
½ cup celery, thinly sliced
½ cup carrot, julienned
8 Boston or bib lettuce leaves, washed and dried.

Chicken:
¼ cup Franks Red Hot original sauce
¼ cup honey
¼ cup fresh lime juice

Vegetable Oil:
1 lb. boneless skinless chicken breast
½ tsp. kosher salt
½ tsp. Cajun seasoning blend.

Stir together mayonnaise, mail Worcestershire, lemon juice, salt, and cayenne for the sauce. Fold in blue cheese and parsley and chili until ready to serve. Prepare vegetables and lettuce keeping each separate. Chill until ready to serve.

Toss chicken and seasonings together in a bowl. Heat a large sauté pan over medium high heat; add the oil and sauté the chicken, stirring occasionally, until chicken begins to brown, about 3 min. Add the hot sauce honey mixture; simmer until sauce reduces and thickens, about 5 min.
To assemble, place about ¼ cup chicken and a little sauce in each lettuce leaf. Drizzle with blue cheese sauce before serving.
