Parmesan Crisps


(I know these sound odd, but they are wonderful! They are great crunched up in salad or even just to snack on with a glass of wine. The kind of parmesan that is already grated in a can will not work with this recipe. You must use a fresh block and grate by hand…Sorry, but soooo worth it!! )

1 block fresh Parmesan Cheese, grated

Preheat oven to 400 degrees F.

Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down with back of spoon. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2 inch apart.

Bake for 3 to 5 minutes or until golden and crisp. Cool.
